Some related packages require pandas versions past 2.0, resulting in an conflict

Describe the solution you'd like
remove the <2.0 constraint on pandas from server/requirements.txt, and update code to work with current versions

Describe alternatives you've considered

1. Ignore the constraint - allows to install the other packages, but may have a bad effect on the library
2. Not work with any package that requires pandas >=2.0, which is getting harder and harder
